MONKEY BREAD BITES
This recipe is from the Southern Living cookbook.
Ingredients
1/4 cup granulated sugar
1 Tablespoon ground cinnamon
1-18 ounce can refrigerated buttermilk biscuits (Pillsbury Golden Layer Buttermilk Biscuits)
1/2 cup butter
1/2 cup packed light brown sugar
1 teaspoon vanilla extract
1/2 cup toasted pecans (optional)
12 XL muffin cups (Important! Use extra-large, and not the regular size!)
Directions
Combine granulated sugar and cinnamon in a large bowl. Cut biscuits into fourths, and add to sugar mixture; toss to coat. Set aside. Melt butter in a small saucepan over medium heat. Add brown sugar; cook 3 minutes, stirring until sugar dissolves. Remove from heat, stir in vanilla and pecans. Arrange 5 coated biscuit pieces in each greased extra-large muffin cup. Sprinkle evenly with remaining cinnamon-sugar mixture. Drizzle evenly with pecan syrup. Bake at 400 degrees for 18 minutes or until browned
Yields 12 servings
Tip
Make sure to use XL muffin cups. The cinnamon-sugar mixture will spill over and make it too messy to use regular sized muffin cups. Also, since these treats are greasy, foil cups are better than paper muffin cups.
