Kate's Egg Salad Sandwiches

My friend, Kate Pierce, made these sandwiches for a baby shower we hosted together. These sandwiches are quick to make and a perfect blend of creamy egg flavor!

KATE’S EGG SALAD SANDWICHES

Ingredients
8 slices of bread
6 eggs
1-2 Tablespoons Mayonnaise
Salt and Pepper

Directions
Place eggs in a pot and cover with 1 inch of cold water. Bring water to a gentle boil. Immediately remove from heat. Cover, and let sit for about ten minutes. Remove eggs and place in an ice bath for a couple of minutes. Crack, peel and cut each egg into small pieces. Add 1-2 tablespoons (more or less) of mayo until the mixture is sticky. Then, add your desired amount of salt and pepper.

Place egg mixture in between slices of bread. Slice each sandwich diagonally. Serve chilled.

Yields 4 sandwiches.

Tip
To add color to these sandwiches, consider adding chopped chives to the egg mixture. Also, Kate served these sandwiches on both wheat and white bread. You could choose a flavorful grain bread, or turn these into sandwich wraps and use a green or red tortilla for a festive touch!
