Brittney's Chicken Salad Sandwiches

My friend, Brittney Soenen, made these sandwiches for a baby shower we hosted together. They are quick to prepare, delicious and a great addition to a party menu!

BRITTNEY’S CHICKEN SALAD SANDWICHES

Ingredients
4 ounces reduced fat cream cheese
1/2 cup reduced fat mayo
2-13 ounce cans of shredded chicken
2 green onions, chopped
1/4 cup cucumber: peeled, seeded, and diced
1/2 teaspoon salt
1/2 teaspoon pepper

Directions
Mix the above ingredients. Cover and chill at least 4 hours.

Place mixture in between slices of bread. Slice each sandwich diagonally. Serve chilled.

Yields 10 sandwiches.

Tip
If you are interested in jazzing-up small sandwiches festive for an event, consider adding a decorative toothpick to the center of each sandwich. I have also seen sandwiches with a tiny olive or pickle placed on top of the sandwich with a toothpick pressed through!
