Cake Truffles

CAKE TRUFFLES
This recipe is adapted from Bakerella's cake balls.

Ingredients
1 box cake mix (bake as directed on box for 13 X 9 cake)
1- 16 ounce can cream cheese frosting
1 package chocolate (chips, bark or coating)

Directions
Bake cake according to the box’s directions. Next, allow the cake to cool completely. Then, crumble the cake into a large bowl. Mix crumbled cake thoroughly with 1 can cream cheese frosting. (It may be easier to use fingers to mix together, but it will get messy.) Roll mixture into quarter size balls and lay on cookie sheet. It should make 45-50 cake truffles. Chill for several hours. Melt chocolate in microwave per directions on package. Roll balls in chocolate and lay on wax paper until firm. You can also use a spoon to dip and roll the truffle into the chocolate.

To customize cake truffles:
The cake: use vanilla, chocolate or red velvet mix to change the color of the inside of the cake truffle. Also, you could start with a vanilla cake mix and stir in a dash of color powder to customize the cake color.

The coating:use candy melts or color dust to customize the color of chocolate coating. Also, try adding
sprinkles or chocolate drizzle. But remember that you must add sprinkles immediately after dipping the truffle in chocolate. Or, if you choose to decorate with a drizzling of melted chocolate, wait until the dipped truffle has cooled.

Tip
If you like cake truffles, try brownie truffles! Just substitute a brownie mix for the cake and use fudge frosting instead of cream cheese frosting.
