Peanut Butter Chocolate No-Bake Cookies

Maya Angelou has a cookbook with recipes on one side of the page and a story about the origin of the recipe on the other side of the page. Since hearing about her cookbook I have liked the idea of tying specific memories to recipes. In my recipe file I write on the recipe cards the significant events I have made recipes for. I also write the name of the person who gave me the recipe. Since I love cooking and am sentimental by nature, keeping track of a recipe's heritage is something I love to do!

Growing up my sister and I looked for easy dessert recipes to learn. These no-bake cookies are one of our favorites. We must have made it once a week during the summer! Any time I have one of these cookies I am reminded of her. She has a couple of children and has even started the tradition of making it with them! This recipe is super simple, straight forward, and can be made in less than 10 minutes.


STEPHANIE'S PEANUT BUTTER CHOCOLATE NO-BAKE COOKIES

Ingredients
1 cup sugar
1/4 cup milk
1/4 cup butter
1 1/2 Tablespoon cocoa
1 1/2 cup quick cooking oats
1/4 cup peanut butter
1/2 teaspoon vanilla extract

Directions
Put first 4 ingredients into a small pot and bring to a boil. Stirring continuously, allow to boil for 1 minute. Remove from heat. Quickly stir in remaining 3 ingredients.

I use a spoon to dollop the cookies onto a parchment lined baking sheet (not to bake) to cover with plastic wrap and chill in the refrigerator. If made into cookies, this recipe yields at least 1 dozen cookies. These cookies may be eaten warm or chilled.

My sister liked to pour the mix into small loaf pans to store in the refrigerator. She slices off pieces as she wants them.
