Favorite New Recipes of February

Soft Pretzel Bites

I live with two pretzel fanatics.  And if it's in the genes, a third is on the way!  So, I decided it was high time to learn how to make pretzels.  These are delicious, and it's an easy recipe!  I made the whole recipe, froze half of the unbaked bites, and divided the last half between salty pretzel bites and cinnamon sugar bites.  It made for a great Saturday lunch (and dessert) paired with grilled jalapeno sausages! Note: definitely don't cut them larger than inch long segments.  They puff when boiled and baked!

This recipe is fast, simple and GREAT!  I'm considering it a new staple around here.  We made it for soft tacos, and used the leftovers for taco salad.  Notes: the end of recipe has lots of variations/topping ideas.  Also, my crock pot cooked the chicken in 4 hours (not 5-6 hours). 

Ham and Asparagus Quiche

I made a few different quiches this month trying to narrow it down to a favorite.  I definitely have not baked an exhaustive list to call this one the best of the best... but, it is my new go-to recipe and a great one at that. An added bonus is that it looks so pretty when baked.  And, considering D doesn't care for swiss cheese, the cheddar in this one makes it that much more a winner in his book.  My favorite part, is that this recipe is sooooooooo super simple.  (Especially compared to the Pioneer Woman one that I tried.)  Also great is that Jenny has a list of different variations for changing up this basic quiche recipe.  They all look delicious.  I think my family has a lot of Saturday morning quiche in their future.  Although, G is always asking for hot cakes instead ; )

We love this recipe, maybe even more than traditional lasagna :)  I used 12 no-boil lasagna noodles to speed up the process, and it turned out delicious!
