Since I enjoy trying new recipes I thought I may start posting links to those that we really liked. It may be once a month, or it could be sporatic... we will see!

Oh, sooooo good. Such a unique and hearty texture. And really beautiful too. Really, try these. I splurged on buying maple syrup thinking I could use it throughout the fall season in some new recipes. These are awesome because they can be prepped ahead and left in the refrigerator for days until you are ready to bake them. I even froze a batch of them to bake later this month.
Conocnut Granola

I first enjoyed this granola at David's parents' home in the spring. I made it for us recently and we all really enjoy it. It is simple, yummy, and pairs great with yogurt!
Lasagna Soup

Sounds different. I mean, lasagna itself is good. But, this is worth trying. In fact, it comes from a cookbook rated best cookbook ("300 Sensational Soups") of 2008 by GMA. The ricotta cheese mixture takes it to a whole new yumminess level. Note: I skipped the basil, bay leaves and tomato paste, since I did not have them on hand. It still turned out awesome! I think it is great for a family dinner or even having company come over.
I made these for G's birthday. Super simple. Kid approved. I think they'd freeze well too.
I'd never made frito pie before, thinking it was too greasy or fatty. I did not feel that way about this recipe, in fact- I liked it. My favorite thing is the spiciness of the meat. It is spicy, but even our little man liked it, so its not too hot.

I used letovers from the frito pies to make tacos a few nights later. I cut a tortilla into quarters, stuffed each quarter into a muffin cup, sprayed it with olive oil and sprinkled with kosher salt. I baked them for 10-15 minutes and then filled each with beef, lettuce, cheese. This was sooooo easy and soooo good. It's in our regular rotation now!
